Spring Superfoods & Their Health Benefits

Spring is upon us and with it comes a new season of foods to bring into your diet! Arugula, blueberries, and salmon are just a few of our favorite foods to incorporate into spring meals because of their richness in vitamins and, not to mention, they are delicious. Arugula

Arugula is an excellent source of vitamins A, C, and K. It is also a good source of minerals including potassium, calcium, and magnesium. All of these nutrients work together to provide numerous health benefits. Arugula is a great antioxidant, meaning it can help fight off damage to cells and DNA. This makes it a powerful tool in the prevention of diseases such as cancer. Arugula is also a detoxifier, meaning it helps rid the body of harmful toxins. This can help improve overall health and reduce the risk of developing chronic diseases. 

Blueberries

Arugula and Blueberry Salad with Balsamic Vinaigrette 

Ingredients:

1/4 cup balsamic vinegar
1/4 cup olive oil
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 pound arugula
1/2 cup blueberries
1/4 cup crumbled blue cheese
1/2 cup slivered almonds, toasted
1 (5 ounce) can salmon, skinless and boneless, cooked and shredded

Instructions 

1. In a small bowl, whisk together the vinegar, oil, mustard, salt, and black pepper.
2. In a large bowl, combine the arugula, blueberries, blue cheese, almonds, and salmon.
3. Drizzle the vinaigrette over the salad and toss to coat.
4. Serve immediately.

Salmon and Arugula Wraps

Ingredients:

4 (6-inch) wheat tortillas
1/4 cup mayo
1 tablespoon Dijon mustard
1 tablespoon honey
1 tablespoon curry powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 pound arugula
1 (6-ounce) can salmon, drained
1/4 cup raisins
1/4 cup slivered almonds, toasted

Instructions 

1. Preheat the oven to 350 degrees F (175 degrees C).
2. Spread the tortillas out on a baking sheet.
3. In a small bowl, whisk together the mayo, Dijon mustard, honey, curry powder, salt, and pepper.
4. Spread the mixture over the tortillas.
5. layer the arugula, salmon, raisins, and almonds over the tortillas.
6. Roll up the tortillas and cut into 1-inch slices.
7. Serve immediately.
